White Wine Scallops with Chorizo and Peas

This is a super quick and easy dish to make that always adds the wow factor to any supper plans you may have.

It can be made and ready to serve in less than 10 minutes.

Ingredients (for 2 people as a starter)

8 scallops

Splash of dry white wine (1/4 of a small glass)

One packet of chopped and diced chorizo

Frozen peas (fresh if you can find them)

One dollop (table spoon) of Creme Fraiche (optional) 

8 bruschetta (to serve the scallops on, (optional))


Step one: Add the chorizo and frozen (or fresh) peas to a frying pan or skillet on a medium heat and chuck around for 3 minutes 

Step two: Add the white wine and scallops. Cook the scallops for 3 mins each side

Step three: If you are using the creme fraiche (you don't have to but it does add a nice glaze and finish), add it now, stir in for less than a minute and then serve.

Step four: for am added touch, serve the scallops and some of the sauce on the bruschetta and scatter the peas and chorizo around the plate.

Serve with a crisp glass of Chablis, Sancerre or if it is a Friday night treat, why not something with a bit of fizz.
