Try our Welsh oak smoked salmon in this traditional Eggs Royale recipe, perfect for a lazy Sunday morning treat! (Serving 2)
- Begin by making the hollandaise sauce. For this you need to whisk together the juice of one lemon and 1 tbsp of white wine vinegar with 4 egg yolks in a heat proof bowl over a saucepan of simmering water. Very slowly add in 100g of melted butter into the mixture, whisk continuously to ensure the mixture doesn’t split. Once the hollandaise has thickened remove from the heat and set aside.
- Pouch 4 fresh eggs in boiling water for 3 minutes to ensure a runny yolk while toasting your English muffins.
- Assemble the eggs royale by placing your Welsh Oak smoked salmon on to the toasted English muffin, top with the perfectly poached eggs and pour on your hollandaise sauce. Garnish with a sprinkle of finely sliced fresh chives and serve immediately.
